I stopped in recently, and two dishes in particular stopped me in my tracks.

Queso Frito: The Perfect Bite

Let’s start with the queso frito — fried cheese cubes that sound simple and deliver something extraordinary.

The exterior has this beautiful, golden crunch that gives way the moment you bite in. And then the cheese inside is soft, warm, and squeaky in that deeply satisfying way that only certain fresh cheeses can be. It’s rich and salty and completely addictive on its own. But Isla serves it alongside a sweet fruit glaze dipping sauce that takes the whole thing to another level entirely.

That combination — the saltiness of the cheese against the sweetness of the glaze — is one of those perfect food moments where two opposing flavors find each other and make total sense together. Crunchy, cheesy, squeaky, sweet, salty. Every bite is the right bite. This is the kind of dish that disappears off the plate before you realize you’ve eaten all of it.

The White Fish Fritter: A Puerto Rican Classic

The second dish that genuinely surprised me was their white fish fritter — a traditional Puerto Rican preparation that I’d honestly never encountered before walking into Isla.

Picture a thin, flat, circular disc of seasoned white fish that gets deep-fried to order. It doesn’t look like much sitting there, but the moment you pick it up you understand what’s happening. The outside is thin and genuinely crispy — real crunch, not just a coating. Inside, there’s just enough fluffy, spiced fish filling to give it substance without weighing it down.

What struck me most was how boldly fishy it is. And I mean that as the highest compliment. There’s no hiding what this is, no heavy seasoning designed to mask the flavor of the fish. It’s salty and spiced and the fish flavor is front and center, which is exactly how it should be. It’s apparently a beloved staple in Puerto Rico, and after one bite I completely understand why. It’s one of the most uniquely textured things I’ve eaten in a long time — simultaneously light, crispy, and satisfying all at once.

Isla will be bringing this dish to Taste of Syracuse this year, and I genuinely think it’s going to be one of the most talked-about bites of the weekend.

Taste of Syracuse returns to Clinton Square in the heart of downtown Syracuse this Friday and Saturday, June 5th and 6th. If you’ve never been, it’s exactly what the name promises — a full immersion in the culinary identity of this city, spread across one of the most iconic public spaces in Central New York.

Syracuse’s Food Scene Is More Diverse Than You Think

I say this all the time, and I’ll keep saying it: people underestimate this city’s food culture. Taste of Syracuse is the single best argument I can make for why Syracuse deserves more credit than it gets.

This weekend you can eat Colombian empanadas from Ruby’s and then turn around and bite into a Puerto Rican fish fritter from Isla. You can try flavors that trace back to the Caribbean, to Latin America, to communities that have planted roots here and brought their food traditions with them. That doesn’t happen by accident. It happens because this city has people in it who care deeply about what they cook and where they come from.

That’s what makes Taste of Syracuse worth showing up for every single year. Not just the food — though the food is outstanding — but what the food represents. Come hungry, come curious, and go find Isla. The queso frito alone is worth the trip.
