As a content creator, it would be easy for me to drive out to Buffalo, hit the same five spots everyone else hits, and put out a “Best Wings in the 716” video right before football season like every national food channel does. You see those videos every August and September. Wing tour. Anchor bar. Duff’s. Rinse. Repeat.
Honestly? That makes me not want to do it.
But I am curious. Curious about which spots really deserve the hype. Curious about the history behind them. Curious about what I actually think, not what the algorithm thinks.
So instead of making it a big content series, I’ve decided to do it quietly. No official ranking. No dramatic thumbnails. Just me slowly checking places off my list.
And I’m using the top-tier wing lists from the crew over at Buffalo Wing Coalition as a loose guide. When they put Adolf’s First Ward on their top-tier list, that was enough reason for me to go.
A Little History
Adolf’s isn’t some trendy pop-up chasing Instagram clout. It’s old Buffalo.
Located in the city’s historic First Ward — a neighborhood built by German and Polish immigrants along the waterfront — Adolf’s has been part of the community for decades. It’s the kind of place that feels lived in. Wood bar. No nonsense. Regulars who’ve been coming for years.
The First Ward itself has deep roots tied to Buffalo’s shipping and grain industries. It was working-class, blue-collar, and proud. Bars like Adolf’s weren’t built for tourists, they were built for the neighborhood. Over time, as Buffalo wings became iconic, places like this didn’t pivot to trend. They just kept doing what they do.
And that’s important.
Because some of the best wing spots in Buffalo aren’t flashy. They’re consistent.
The Wings
I ordered their Medium wings and Sully’s Salt & Vinegar.
The Salt & Vinegar wings were my favorite by far.
They were crispy — properly crispy — and the salt and vinegar seasoning wasn’t a heavy, grainy crust. It’s a fine powder that coats the wings evenly. Almost like powdered sugar in texture. It clings to every edge and crack of the skin without overwhelming it. You get that sharp vinegar tang immediately, but it doesn’t burn your palate. It’s balanced. Snackable. Dangerous.
The Medium wings were also very good. Classic Buffalo style. Good heat. Good flavor. Personally, I lean toward more sauce and more vinegar punch, so I’d probably ask for them a little extra wet next time.
The Blue Cheese (Yes, It Deserves Its Own Section)
It might be the best blue cheese I’ve had.
Super thick. I mean thick-thick. It’s almost like mud in the cup. You can flip the container upside down and it’s not going anywhere. Big chunks. Tangy. Creamy. It doesn’t run off the wing, it sits on it. Exactly how blue cheese should behave in Buffalo.
Final Thoughts
Adolf’s isn’t trying to be trendy. It’s not trying to reinvent the wing. It’s just executing at a high level in a bar that feels authentic to its neighborhood and its history.
And honestly? That’s what I’m looking for.
Not a viral moment. Not a “Top 10 Must Try” headline.
Just really good wings in places that matter to the city they’re in.
